Chipotle-Bourbon-Easy-Meatballs-1-of-7-7Bourbon-sauced Meatballs

1 or 2 packages cocktail-sized frozen meatballs

2 cups ketchup

3/4 cup brown sugar

3/4 cup bourbon

1 Tbsp. onion, finely minced

1/2 cup water

Combine all ingredients except meatballs in saucepan and cook 10 min. or until hot and well blended. Put sauce in crockpot with meatballs and cook on low for 2-3 hours.

1 – 6 ounce can small or Med ripe olives, drained, finely chopped

1/4 cup light mayonnaise

3 Tbsp. pine nuts

1/8 Tsp. salt

Ground pepper to taste

2 Tbsp. chopped fresh basil

3 Tsp. chopped green onion

3 Tsp. chopped drained sun-dried tomato packed in oil

12 slices of thin-sliced white bread

1/2 cup light cream cheese

Combine all ingredients except bread and cream cheese; mix well. Cover and chill at least 1 hour or up to 24 hours. Cut crusts from bread forming 4-inch squares. Spread 6 slices of bread with olive mixture; smear cream cheese on other slices. Close sandwiches, pressing lightly. Cut into triangles. Makes 24 sandwiches. Note: I used wheat and white bread.

1 can Campbell’s Cheese Soup

2 lbs. Velvetta Cheese

1/4 Tsp. garlic powder

1/2 Tsp. onion powder

1 small jar mild salsa

Melt cheese in double boiler; add other ingredients stirring until hot. Pour over chips or use as a dip. Makes a lot of sauce!

8 oz. thinly shredded cheddar cheese (sharp or extra sharp_

4 oz. cream cheese, room temperature

4 Tbsp. mayonnaise

1 – 4 oz. jar pimentos, diced

1 Tbsp. prepared yellow mustard

Tiny bit of grated onion (Optional)

Mix all together. Spread on fresh white bread.

cranberry-sauce-horiz-a-2000Tex-Mex Cranberry Salsa

1 cup water

1 cup sugar

1 package fresh or frozen whole cranberries

2-3 Tbsp. minced jalapeno

2 Tbsp. chopped cilantro

Dash cumin

2 green onions, chopped

1 Tbsp. lime juice

Boil cranberries with water and sugar for 10 minutes, pour into bowl and stir in remaining ingredients. Cover directly with plastic wrap and cool at room temperature. Serve with chips (for a more festive look, serve with red chips).
